Booth’s Breakfast: Leftovers (Sausage, Peppers and Onion Hash w. a Fried Egg)

Like most folks I am horrified about the amount of leftovers I throw away every week. We try to shop smart, to eat leftovers for lunch, freeze what we can, but every weekend I find myself throwing out uneaten food.

Sunday night I made sausage, peppers and onion subs for dinner while we watched the Grammys. Instead of using Italian sausage the recipe calls for in our subs I use sliced uncured turkey kielbasa. It’s faster, cheaper and the blessed child does not like the fennel in real Italian sausage. So, before I put away the leftover food from Sunday I decided I would find a way to repurpose it:
– I chopped the strips of vegetables and sausage into bite sized pieces.
– I always have frozen shredded potatoes in the freezer in case I need to make latkes on the fly (8 nights is a lot of time spent grating potatoes).

I found this recipe for Kielbasa hash and decided I could use the leftovers and the frozen potatoes for a new breakfast dish made of leftovers. The tomato paste, garlic and vinegar just added to the flavor. Add a fried egg with a jammy yolk (Booth is not a fan of runny yolks) and we’re good to go!
