Booth’s Breakfast: Overnight Oats, Healthy Pumpkin Bread

The blessed child and I are going to Princeton, NJ this weekend for a Bat Mitzvah and to go book shopping! That means Booth is on his own, so I made overnight oats and some healthy pumpkin bread to have for breakfast while we are away. This pumpkin bread is a family favorite, made with whole wheat flour and sweetened with maple syrup instead of white sugar.
The overnight oats are orange cranberry and peanut butter banana.
