Booth’s Breakfast: Coconut Banana Pancakes w. Chicken sausage
My Breakfast: Coke Zero
The blessed child’s sleepover from Friday night has stretched into Sunday morning, the friend that is here loves coconut. The blessed child is not a fan of the texture. I saw this recipe in my email from The Times this week and thought it would be perfect, not too much coconut, but a subtle nod from the coconut flour without the texture of shredded. I ran out to the market to grab some and the buttermilk and we’re in business.
Confession: I HATEE BANANAS. Hate them with a passion, the smell actually makes me ill. However, I understand they are nutritious and Booth and child love them, so they are always on hand a a staple in many breakfasts. It’s helpful I do not get hungry until later in the day.
These are SERIOUSLY fluffy, fat pancakes. Now I just have to wait for Booth and the kids to wake up!
While I wait I am going to google other recipes with coconut flour, now that I have a whole bag of it in the cupboard.
