Booth’s Breakfast: Oatmeal Cookies

My Breakfast: Coke Zero

Yesterday I decided I was still in the baking mood, so I made some of my favorite healthy breakfast oatmeal cookies. I don’t eat refined sugar, but I can eat things sweetened with small amounts of honey, agave or maple syrup. I am always looking for recipes I can both eat and bake (usually I bake things for other people I cannot eat myself).

I decided with what is sure to be a busy week I’d whip up some of these cookies to have on hand for Booth and the blessed child to eat if I can’t or don’t want to cook. Who can turn down milk and cookies for breakfast? I make half with chopped dates and half plain – we’re not big raisin fans. It took me a while to find a recipe all 3 of us liked. This recipe technically isn’t a breakfast recipe, but with whole wheat flour, oats, dried fruit and no refined sugar, they fit the bill.
